When editing your email notification mapping(s), head to the Audience section.
Under the ‘Audience’ section, Select either Email Users or Email and Jira users within Target Audience.
This will then allow you to populate the Audience Address Custom Fields setting with the Custom Fields that contain the Email Addresses.

After saving your configuration changes, any email only users populating the chosen custom fields will be notified against the matching notification mapping.
