Sender Processing
Summary
Here you configure the Custom Fields that the sender should be placed within. These custom Fields are different based on whether they have a Jira account or not.

Configuration options
Jira User
Jira user sender to User Picker custom field
The User picker Field that the sender user will be added to.
Jira user sender address to Text custom field
The Text Custom field that the sender user’s email address will be added to.
Jira Service Management
Add Organization member as Request Participant
This allows the sender of the email who is also part of the Organization (which is set on the issue) to be added to the Request Participant field.
Non-Jira user
Non-Jira user sender name to Text custom field
The Text Custom Field that the Non-Jira User sender name will be added to.
Non-Jira user sender address to Text custom field
The text Custom Field that the email address of the Non-Jira sender will be added to.
